 Crustless Blue Cheese, Asparagus and Ham Quiche |

Ingredients
- 100gms blue cheese, crumbled
- 4 slices (200gms) leg carve ham, sliced & diced
- Bunch fresh asparagus (2 inch tips only)
- 7 eggs
- Small red onion, diced
- 2 tablespoons wholegrain mustard
- 1/4 cup cream
- 1/4 cup milk
- 2 T flour
- 10 g butter
- salt
- pepper
Directions
- Turn on oven to 180°C to let oven come up to temperature.
- Panfry onion in butter until just cooked.
- Assemble the ham, blue cheese and onion in a 26cm quiche dish.
- In a bowl, break all eggs. Whisk and add cream, mustard, salt & pepper. Continue whisking.
- In a shaker, add milk and flour. Shake to mix, then add to egg mix whilst continuing to whisk.
- Add egg mixture to the quiche dish and mix all together.
- Lay asparagus tips over quiche and gently press until just submerged.
- Sprinkle with paprika (optional) and bake for 40 minutes at 180°C, or until center is set.
Serve with a light salad for lunch, or simply on its own.
