Crustless Blue Cheese, Asparagus and Ham Quiche

Ingredients
  • 100gms blue cheese, crumbled
  • 4 slices (200gms) leg carve ham, sliced & diced
  • Bunch fresh asparagus (2 inch tips only)
  • 7 eggs
  • Small red onion, diced
  • 2 tablespoons wholegrain mustard
  • 1/4 cup cream
  • 1/4 cup milk
  • 2 T flour
  • 10 g butter
  • salt
  • pepper

Directions

  1. Turn on oven to 180°C to let oven come up to temperature.
  2. Panfry onion in butter until just cooked.
  3. Assemble the ham, blue cheese and onion in a 26cm quiche dish.
  4. In a bowl, break all eggs. Whisk and add cream, mustard, salt & pepper. Continue whisking.
  5. In a shaker, add milk and flour. Shake to mix, then add to egg mix whilst continuing to whisk.
  6. Add egg mixture to the quiche dish and mix all together.
  7. Lay asparagus tips over quiche and gently press until just submerged.
  8. Sprinkle with paprika (optional) and bake for 40 minutes at 180°C, or until center is set.
Serve with a light salad for lunch, or simply on its own.
