This is a delicious way to eat spring carrots. The
gentle sautéing intensifies their flavour and sweetness.
3-4 carrots
2 tablespoons olive oil
3 tablespoons sesame seeds
Juice and zest of 1 orange
Handful chopped fresh coriander or parsley
Salt and pepper to taste
Wash the carrots, then peel and grate.
Heat the oil in a large frying pan or wok and toast
the sesame seeds until they are golden. Add the carrots, orange juice and zest,
and cook quickly for a few minutes until the carrots are soft.
Toss through the coriander and season to taste. Serve
as a side to fish or chicken.
