Carrot Cake recipe
Ingredients: 1 1/2 cups oils 2 cups brown sugar 2 teaspoons cinnamon 4 eggs 1 teaspoon vanilla 2 cups wholemeal flour 1 teaspoon salt 3 cups finely grated carrot 1 cup chopped walnuts 2 small teaspoons baking soda
Icing ingredients: Cream cheese Icing sugar Vanilla Melted butter Lemon juice
How to Prepare:- Mix well oil, sugar and cinnamon
- Whip eggs and vanilla, combine the two
- Mix flour, carrot, salt and walnuts together
- Combine two mixtures and fold in baking soda
- Pour into deep 8 or 10 inch cake tin
- Bake at 350°F for approx 55mins
- Delightfully moist cake, keeps well and will freeze successfully
- Topr with whipped cream or cream cheese icing.
ICING
- Simply beat all ingredients together until stiff.
- Spread generously, decorate with walnuts
