Carrot Cake recipe


Ingredients:


1 1/2 cups oils
2 cups brown sugar
2 teaspoons cinnamon
4 eggs
1 teaspoon vanilla
2 cups wholemeal flour
1 teaspoon salt
3 cups finely grated carrot
1 cup chopped walnuts
2 small teaspoons baking soda

Icing ingredients:

Cream cheese
Icing sugar
Vanilla
Melted butter
Lemon juice


How to Prepare:

  • Mix well oil, sugar and cinnamon
  • Whip eggs and vanilla, combine the two
  • Mix flour, carrot, salt and walnuts together
  • Combine two mixtures and fold in baking soda
  • Pour into deep 8 or 10 inch cake tin
  • Bake at 350°F for approx 55mins
  • Delightfully moist cake, keeps well and will freeze successfully
  • Topr with whipped cream or cream cheese icing.


ICING

  • Simply beat all ingredients together until stiff.
  • Spread generously, decorate with walnuts
